All ingredients are sourced locally, with a focus on KM0 (zero kilometers). He has worked at Arnolfo in Colle di Val d’Elsa, Joel Robuchon’s restaurant in London, and the renowned Roman establishments Retrobottega and Acquolina. His culinary journey also includes time spent under the guidance of Yannick Alléno at the prestigious Pavillon Ledoyen in Paris, showcasing his exceptional talent and commitment to excellence.
